You are allowed to bring cheese into California. you may not bring fruits
and vegetables as well as meat products. If you want to you can tell the
customs official.

But if you are already in Switzerland I wouldn't take the premix but
either get 2 pieces of chese aged Gruyere and some Vacherin Fribourgeois
and grate them yourself. If you want to you can get them pregrated at a
good cheese store when you ask for it. In case you won't use it
immediately, you can always freeze the cheese upon arrival in the US. Also
take a few bottles of dry Swiss wine to go along.

You can also get these cheeses in the US. The webpage has a few listings
on where to get them from. In the Bay area I can recomend the Milk Pail in
Mountain View, they have Gruyere, sometimes even the aged variety and
sometimes teh Vacherin. For sure you can get these cheeses at the cheese
board in Berkeley and also in the city (SF).
