Hmmmm... I am no immigration lawyer, but here are a couple points I thought
might help.

Is your fiance (congratulations) american? Your message does not
specifically say so. If it's the case, isn't this all a moot point? Getting
married to an American grants you a Green Card almost automatically, and I
am not sure that you need all that much proof of financial "fitness". If
there is, his current state of employment may well be sufficient (I did
this myself, but I don't remember).

Also, there seems to be a great fit between your background and the needs
of the place you are moving to. Maybe you could get some documents showing
that there is interest from some employers for people with your qualifications.

Finally, you looking for a job right now might actually be
counter-productive in terms of the INS. It might make you look like you are
getting married in order to get the job, when in fact, it's the other way
around. So, personally I would present my strategy this way: 1) "I am going
there and getting married." 2) "I fully intend to get a job and be a
contributing citizen, and look how relevant my background is, so you can be
assured I won't be collecting benefits my whole life."

In the end, after all, this is what a K visa is for: entering the country
and getting married. In my case, I didn't apply for a K visa (didn't know
it existed), even though I knew I was going to get married and get
employment. This "mistake" alone is what our green card interview focused
on afterwards.

Finally, maybe an alternative is for you both to get married in
Switzerland. Apply for a green card at the embassy in Bern and then return.
But I don't know if that would be better.
