Vuko, Anne,

As several people have mentioned, some prepackaged
fondues are all right, like Appenzeller that you find
at Trader Joe's. However, if you want to make your own
fondue, it should be made with Gruyere and Vacherin
Fribourgeois.
You can find Gruyere in many places ($6 per lb. at
Trader Joe's), and Vacherin Fibourgeois at the Cheese
Board , 1504 Shattuck Avenue, Berkeley. The Vacherin
is pretty expensive there ($12 per lb.) and it seems
that its quality is somewhat variable, however, when I
tried it, the fondue was excellent. In any advent, it
is going to be much better than with Emmental.
As far as importing cheese from Switzerland, "hard",
"fully cured" cheeses are legal (see
http://www.aphis.usda.gov/travel/). I am not a cheese
specialist, I know for sure that Gruyere is ok,
however for the Vacherin I have heard both that it is
ok and not ok. Anyway, I generally import them in
vacuum sealed packages, and have not had any problems
so far.
